    How Does USDA Beef Grading Work?

    USDA grading is voluntary — producers pay for it. Beef that isn't graded isn't necessarily bad; it simply hasn't been evaluated.

    Graders evaluate two factors: marbling (white flecks of fat within the muscle) and maturity (the age of the animal). Younger cattle with more marbling earn higher grades.
