- 1 large Yellow onion, diced
- 4 large Carrots, sliced into rounds
- 3 stalks Celery, diced
- 1 lb Yukon Gold potatoes, cubed
- 4 Garlic cloves, minced
- 2 tbsp Tomato paste
- 4 cups Beef broth
- 1 cup Red wine
- 2 tbsp Worcestershire sauce
- 3 sprigs each Fresh thyme and rosemary
- 2 Bay leaves

Toss beef cubes in flour with salt and pepper. Sear in batches in hot olive oil until deeply browned on all sides. Remove and set aside.
